Chile Rubbed Pork Tacos, Family Style

A nice twist on the classic taco


Prep time: 10 minutes,
Cook time: 25 minutes
Serves: 4

3 tbsp vegetable oil
3 tbsp apple cider vinegar
3 tbsp cilantro, minced
Juice and zest of 1 lime
1/2 onion, diced
1 tbsp EV olive oil
1 1/2 lbs Organa pork tenderloin, cut into bite-sized cubes
1 tsp chile powder
1 tsp garlic powder
2 tbsp brown sugar
1/2 tsp oregano
1/2 tsp cumin
1/4 tsp allspice
1/4 tsp cinnamon
8 warm organic corn tortillas
fresh salsa
Monterey Jack Cheese, shredded
shredded lettuce and lime wedges
2 avocadoes, mashed with lime juice and fresh garlic

Mix first 5 ingredients in a bowl. Stir in pork. Cover and refrigerate for 10 minutes. Mix together the chile, garlic, sugar, oregano, cumin, allspice and cinnamon; set aside.

Heat olive oil in a large skillet. Drain pork; toss in spice mixture until well coated. Add pork to skillet and sauté until browned and cooked through. Transfer pork to serving bowl and serve with tortillas, salsa, cheese, lettuce, lime and avocados.
