Garlic & Herb Marinated Chicken Breasts

Perfect for the indoor grill pan as well as outdoor barbecue.


Marinate time: 2 hours or overnight
Cook time: 15 minutes
Serves: 4

5 cloves garlic, minced
1 tsp basil
1 tsp thyme
1 tsp oregano
1 tsp tarragon
1 tsp salt and pepper
zest and juice of 1 lemon
1/2 cup EV olive oil
6 boneless, skinless natural chicken breast halves
1 large plastic freezer bag
grill brush and cooking oil

Mix together the first 7 ingredients in plastic bag. Add chicken and marinate for 2 hours or overnight in refrigerator. Prepare a medium-hot fire in the grill, or heat grill pan to medium-high. Brush with cooking oil. Place chicken on grill and sear 5 minutes per side or until it reaches an internal temperature of 165°F.
