German-Style Roast Chicken

Onion, cabbage and apples make this chicken dish special


Serves: 1
1/4 tsp. canola oil
1/4 organic medium onion, sliced
1 c. organic red cabbage, shredded
1/4 organic apple, cored, peeled, shredded
1/2 tbsp. maple syrup
1/2 tsp. thyme
1/2 tsp. celery seed
sea salt and pepper to taste
1/4 c. organic apple juice
2 tsp. organic apple cider vinegar
1 (6 oz.) boneless, skinless chicken breast

Preheat oven to 350° F. Heat oil in large sauté pan over medium high heat. Add onion, cook for 2 minutes until soft. Add cabbage, apples, syrup, spices, salt and pepper. Add cider and vinegar. Cook for 5 minutes.

Spoon cabbage mixture in a baking dish. Heat same pan over high heat. Sear chicken on both sides. Place on cabbage and bake for 30 minutes.
