A delicious side dish or appetizer

Serves 4-6
1/4 cup olive oil
1 red onion, peeled and chopped
3 cloves garlic, peeled and sliced
4 cups green beans, trimmed
6 very ripe roma tomatoes, peeled and chopped
2 handfuls basil leaves
salt and fresh ground pepper to taste
1 tsp. raw sugar
Heat the oil in a heavy pan then add the onion and garlic and cook over low heat until translucent. Add the beans, top with tomatoes, basil and sugar. Add salt and pepper to taste. Simmer, covered, over low heat for 30 minutes or until the beans are tender.
