Homestyle Chicken Noodle Soup

If you can't shake that winter cold, heat up a steamy pot of this terrific soup.


Prep + cook time: 45 minutes
Serves: 8-10

3/4 pound boneless skinless chicken breasts, cut into 1/2-inch pieces
2L organic chicken stock
2 medium stalks celery, sliced
2 organic carrots , sliced
1 medium onion, chopped
1 cup organic sweet peas
2 cloves garlic, finely chopped
1 tsp. dried parsley
1 tsp. dried thyme
1 bay leaf
1 cup wide organic egg noodles

In a large soup pot over high heat, bring all ingredients except pasta and peas to a boil. Keep soup at a low boil for about 20 minutes over medium high heat, stirring occasionally. Add pasta, peas and return to boil. Reduce heat and cook uncovered for 10-15 minutes, stirring occasionally, until pasta and vegetables are tender. Remove and discard bay leaf. Ladle into soup bowls and serve with crunchy breadsticks or warm bread.
