The sun-kissed flavours of local melon shine in this refreshing dish.Use any single or combination of melon, including watermelon, honeydew or cantaloupe.
- 6 cups ripe melon pieces
- 1/4 cup fresh lime juice
- 2 tbsp purple and/or sweet basil leaves,
finely chopped
- 2 tbsp fresh mint leaves, finely chopped
- 2 tbsp sweet flaked coconut,
lightly toasted (optional)
Opal or purple basil (in our produce dept.) offers an extra hint of cinnamon and clove, which also pair beautifully with melon. A sprinkle of toasted coconut tops off a dessert serving; leave it out and this dish also makes a great mid-dinner palate cleanser.
Use a melon baller, or slice the melon into one-inch cubes, and put in a large bowl.
Add lime juice, basil and mint and toss gently to coat. Cover and chill for at least an hour.
