Smoked Salmon and Scrambled Eggs on Toasted Bagels with Chive Oil

An elegantly simple brunch dish that's a real crowd-pleaser

Serves: 6

12 large organic eggs
1/2 cup organic milk
1 tsp salt
1/2 tsp thyme
1/2 tsp dill
1/2 tsp freshly cracked pepper
1 tbsp butter
3 plain bagels, sliced in half
1 (8 oz package) smoked BC salmon
1 (8 oz container) whipped cream cheese
Chive Oil (see recipe below)
Chives for garnish

Mix eggs, milk, salt, thyme, dill and pepper together in a bowl until frothy. Melt butter, over medium heat, in a nonstick skillet. Add the egg mixture. When eggs start to firm up, stir gently with a spatula until they are cooked all the way through. Lightly toast bagels and spread liberally with cream cheese. Fold a piece (or two) of salmon on top of each bagel. Place 1/6 of the eggs over the salmon, drizzle with chive oil and garnish with fresh chives.

Chive Oil

1 cup EV olive oil
1 cup fresh chives, chopped
1 tsp salt

Place all ingredients in a blender and puree until smooth. Strain and place in a squeeze bottle. Keep in the refrigerator for up to 2 weeks.
