Spinach & Tofu Dip

This creamy, flavorful, and rich-tasting dip is low in calories and fat. Serve with tortilla chips, French bread or pita crisps.


Prep time: 1 hour
Makes: 8 servings

1 12 oz pkg regular organic tofu, drained
1 pkg onion soup mix
1/2 cup tofu mayonnaise
3 large cloves garlic, peeled
1 10 oz. pkg frozen organic spinach, thawed, drained, and pressed in a colander
1 8 oz. can sliced water chestnuts, drained
1/4 cup thinly sliced scallions

Drain tofu, and pat with paper towels. Place garlic and tofu in food processor, and blend until smooth. Add dry soup mix and mayonnaise then blend. Add spinach, and blend. Add water chestnuts and scallions, pulse until chunky. Refrigerate for at least an hour before serving.
