Tasty Steak Kabobs

Perfect for the grill, marinate these tasty kabobs ahead of time - great on a bed of rice


1 cup Italian dressing
1/4 c. soy sauce
2 Tbsp. brown sugar
1/2 tsp. ground ginger
1 organic green onion thinly sliced
1 pound boneless organic beef round, cut into 1 inch pieces
12 large organic shitake mushrooms
1 medium organic red pepper, cut into chunks
1 medium organic zucchini, sliced

Prep time: 1 to 4 hours, Serves: 4

In a shallow baking dish, combine dressing, soy sauce, brown sugar, ginger and onion. Add beef and vegetables turning to coat. Cover and marinate in refrigerator for 1 to 4 hours, reserving marinade. Alternately thread beef and vegetables on large skewers. Grill or broil, turning and basting frequently with reserved marinade, about 10 minutes or until beef is done.

Follow these temperature guidelines to ensure properly cooked beef. Check for doneness using a meat thermometer: Rare (54 C), Medium Rare (63C), Medium (70 C), Medium Well (74C) and Well Done (77 C)
