4 large baking potatoes, peeled and thinly sliced
1 small yellow onion, shredded
2-3 garlic cloves, minced
1 tbsp fresh thyme, chopped
salt and freshly cracked pepper
4 large organic, beaten
EV olive oil
balsamic vinegar
9 sprigs of fresh thyme
Preheat oven to 350 degrees F. In a large bowl, mix together potatoes, onion, garlic, thyme, salt and pepper. Toss to coat evenly. Pour in the eggs. Mix well. Put potato and egg mixture in a 9 in. X 9 in. lightly oiled pan. Bake for 35 minutes until browned and bubbly. Cut into squares. Drizzle olive oil and vinegar on a small plate. Set omelet on plate and garnish with a sprig of thyme. Serve hot or at room temperature.
