1 1/2 cups organic unbleached flour
1 1/2 cups organic whole wheat pastry flour
3/4 tsp. baking soda
3/4 tsp. non-aluminum baking powder
pinch sea salt
1/2 cup unrefined sunflower oil
3/4 cup unrefined sweetener (pure maple syrup or honey)
1 tsp. vanilla extract
1 tsp. vinegar
1 cup organic soymilk
Banana Chocolate Chip Variation
2-3 ripe bananas, mashed
1 cup dairy-free chocolate chips
Sift all dry ingredients together and whisk all wet ingredients together. Combine. (Fold in bananas and chocolate chips, if using) Spoon batter into a muffin tin with muffin cup liners. Bake at 325°F for about 30-35 minutes
